Introducing the Santa Barbara Lot

The Santa Barbara Lot is a carefully curated coffee that we have developed in collaboration with Benjamin Paz. Our vision for this project was to create a single-variety Natural lot that could be produced at scale while maintaining exceptional quality. We aimed for a classic Natural flavour profile, highlighting rich sweetness and candy-like notes with minimal fermentation funk.

Why Parainema Coffee Varital?

To achieve this, Benjamin Paz identified the Parainema varietal as the ideal choice. This varietal is not only abundant in the Santa Barbara region of Honduras, but it also responds exceptionally well to the Natural processing method, enhancing its inherent sweetness and complexity.

Supporting the Next Generation of Coffee Producers

A key part of this initiative was to support young coffee producers by purchasing coffee from as many farmers under the age of 30 as possible. By guaranteeing our purchase in advance, we provided these producers with the opportunity to process their coffee naturally and access the speciality coffee market for the very first time.

Growth and Success of the Santa Barbara Lot

Now in its second year, the Santa Barbara Lot has grown in both quality and reputation. Some of the producers’ lots have performed so well that they have been separated and recognised as single-farm micro-lots, a testament to their exceptional quality and potential.
