Rosalina is a dedicated coffee producer from the Cabañas region of El Salvador. Although she grew up around agriculture, with her family farming maize, beans and dairy cattle in the lowlands, coffee has always been her true passion.
Five years ago, after her children married and other family members moved away, Rosalina decided to pursue her dream of coffee farming. She purchased a small plot of land in Cabañas and planted Catimor coffee, despite having no previous experience growing coffee commercially.
Today, Rosalina works closely with her brother-in-law, who helps with essential farm tasks such as weeding, fertilising and managing coffee leaf rust (Roya). During the harvest season, Rosalina stays close to the farm to oversee the careful hand-picking and processing of her coffee, ensuring every lot meets her high standards.
Her commitment to quality and continual improvement has resulted in coffees that consistently achieve excellent prices, reflecting the care and dedication invested throughout the growing season.
Coffee Variety
This lot is produced entirely from IHCAFE 90 which is from the Catimor variety, grown in the fertile highlands of Cabañas. Careful cultivation, selective harvesting and meticulous processing combine to produce a clean, expressive cup that showcases the unique character of the region.
Natural Process
Only fully ripe coffee cherries are hand-picked before being transported to a small wet mill near Rosalina’s home. Rather than removing the fruit, the whole cherries are placed directly onto raised drying beds, where they dry naturally over approximately 18 days.
Throughout the drying period, the cherries are turned every 30 minutes using wooden rakes to ensure even airflow and consistent drying. Rosalina also hand-sorts the cherries throughout the process, removing any underripe or defective fruit to maintain exceptional quality.
This careful natural processing method enhances sweetness, body and fruit character, resulting in a vibrant speciality coffee with a distinctive flavour profile.

We recommend you store your coffee in a cool, dry area away from direct sunlight. Keep them in their original bag, or transfer them to an airtight container.
For the best flavour, enjoy your coffee within three months of the roast date. Avoid storing coffee in the fridge or freezer.
