Colombia Tatama Mountains Natural 100% Arabica Speciality Grade Coffee
Colombian Specialty Coffee from Santuario, Risaralda
High in the mountains of Santuario, Risaralda, at an altitude of 2,000 metres above sea level, Montes del Tatama is the result of one man’s determination to produce exceptional Colombian specialty coffee through dedication, precision and a genuine passion for the craft.
Meet the Producer: Ricardo Castilla
Unlike many Colombian coffee producers who inherit generations of farming knowledge, Ricardo Castilla came to coffee from a very different background. Originally trained and working as a mechanical engineer, Ricardo made the bold decision to leave his profession behind and relocate to the countryside, driven by a desire to cultivate coffee and build something of his own.
A Quality-Driven Approach to Coffee Production
From the outset, Ricardo’s focus was never on quantity but on quality. Drawing on his engineering mindset, he introduced carefully controlled protocols throughout every stage of production, from selective cherry picking and harvesting to fermentation and drying. His meticulous attention to detail and commitment to continuous improvement quickly distinguished his coffees from others in the region.
Award-Winning Coffee from Risaralda
Ricardo’s dedication to excellence earned him widespread recognition across Colombia’s coffee industry, culminating in the prestigious Best Cup of Risaralda award in 2014. This achievement cemented his reputation as one of the region’s most respected specialty coffee producers and highlighted the exceptional quality being produced at Montes del Tatama.
Natural Process Tabi Coffee Grown at 2,000 Metres
Grown on the rich volcanic soils of the Tatamá mountain range, this Natural Process Tabi coffee showcases the unique characteristics of both its terroir and Ricardo’s uncompromising approach to cultivation and processing. The combination of high altitude, fertile soils and favourable growing conditions contributes to a coffee with remarkable depth and complexity.
The Natural Coffee Processing Method
Using a traditional natural process, the coffee cherries are dried with the fruit intact around the bean, allowing sugars and fruit compounds to develop and intensify throughout the drying stage. This method enhances sweetness, body and complexity, creating a vibrant and expressive cup that reflects the exceptional environment in which it was grown.
Exceptional Colombian Coffee with a Distinctive Character
Combining high-altitude cultivation, the sought-after Tabi variety and a producer committed to quality at every stage, this coffee is a superb example of the innovation and craftsmanship driving Colombia’s modern specialty coffee industry. The result is a distinctive and memorable coffee that captures both the character of Risaralda and Ricardo Castilla’s dedication to producing coffees of outstanding quality.
